Wednesday, June 20th: Dinner

Near-East Rice Pilaf - folow directions

Green beans - Boil big pot of highly salted water, stick beans in, bring back to boil, boil 1 minute, shock in ice bath. When ready to serve, put beans back and hot water for 30 seconds and drain.

Avacado Salad - Slice 1 avacado into 2 pieces, pan sear cut-side down only until brown, put on plate cut-side up. Press 1-3 cloves garlic in to same pan for 30 seconds, add tomato chunks, cook down, add Sweet-Vermouth, salt, pepper, cook down, pour sauce over avacado, serve with greens piled on plate.

Tomato,Basil,Mozzerlla - Slice tomato cross-wise (leaving top and bottom of tomato for sauce above) into 1/4 to 1/2 inch slices, salt and drain on rack over sheet-pan. Pick basil leaves and wash and dry them. Slice large balls of Mozz into same # of tomato slices. Assemble (bottom up: tomato, basil leaf(ves), Moz, drizzle vinegrette.
